This is another recipe that is favorite among the North Indians. The dish is great for parties and can be prepared in minutes.
Chole
Preparation Time: 35 Mins
Ingredients:
200 gms of chick peas (chole)
2 Medium sized chopped onlions
4 medium size chopped tomatoes
3-4 tbsp oil
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp zeera powder
1 tsp garam masala
2 tbsp chole masala
1 tsp ginger garlic paste
Salt to taste
2 cinnamon sticks (Dalchini)
3-4 Bay Leaves (Tej Pata)
1 Lemon
Coriander Leaves
Method:
1. Soak the chole overnight in water.
2. Boil the chole with a pinch of eating soda. Take a pan , ad 4-5 tbsp of oil, add laung, dalchini and bay leaves and sauté them.
3. Add chopped onions, add ginger garlic paste and fry it till brown. Add chopped tomatoes/puree and fry it for a minute. Add turmeric powder, red chilli powder, zeera powder, garam masala and chole masala to it. Pour in some water and let it cook for 5 mins on low flame.
4. Add boiled chole to the mixture, add half a cup of water and let it cook for 15 mins on low flame. Add 2 tsp of lemon juice to it and garnish it with fresh coriander leaves.
Bathure:
Preparation Time: 35 mins
Ingredients:
250 gms Maida
Salt to taste
3-4 tbsp of oil
½ cup curd
Method:
1. Knead the maida with salt, oil and curd. If the curd is less, you can also add some water to it and make it into a smooth dough.
2. Keep the dough covered with a cloth for about an hour. The dough should not be too soft or too hard.
3. Fry it by making round shaped puris (should be big ). The puris should be deep-fried on a high flame.
